Creamy Tuscan White Bean Pasta.
Like, really supercalifragilistic extra dramatic?
Well… this is no exception. This pasta is incredibly delicious… like climb-to-the-top-of-a-mountain-for-it delicious. Like push-away-the-chocolate-chip-covered-peanut-butter-spoon delicious. Like, maybe-I-don’t-even-want-pizza delicious. Like even-though-I-want-to-emotionally-eat-an-entire-cheesecake-because-I-waited-a-full-8-hours-for-the-Lowes-delivery-truck-to-bring-home-my-new-washer-then-watched-them-pull-up-to-the-wrong-house,-knock,-then-DRIVE-AWAY-but-it’s-okay,-I’ll-have-this-pasta-and-stay-calm delicious. Like even-though-I-still-don’t-have-a-washing-machine-and-want-to-ingest-three-bottles-of-wine-but-will-take-this-pasta-instead delicious.
In other words… it’s delicious.
Ooooh and it’s a perfect way to cram some veggies into your face! Open wide.
And!
In an act of pure desperation, we added some leftover cheddar beer crockpot chicken to this one night as we reheated it for dinner… because I do NOT tell a lie when I say that the guy I live with refuses to eat anything meatless.
I’m not even joking a little bit. Even though this is loaded with beans. Even though it has pancetta. Even though. Ugh.
Help me.
Oh. That was good by the way.
This meal was inspired by my favorite Trader Joe’s hummus that lasts approximately 21 hours in this house. Funny… because this pasta only lasted about 21 hours too.
What can I say… these little piggies went to market.
Creamy Tuscan White Bean Pasta
serves 4
2 cups whole wheat pasta
1/4 cup chopped pancetta
1/2 onion, chopped
3 garlic cloves, minced
4 cups fresh spinach
1 roasted red pepper, chopped
1/4 cup sliced sun dried tomatoes
5-6 artichoke hearts, chopped (about 1/3 cup)
1 can (15 oz) cannellini beans
10-12 fresh basil leaves, chopped
1 tablespoon butter
1 tablespoon flour
1 can (15 oz) skim evaporated milk
1/2 cup low-fat milk
3 tablespoons parmesan cheese
salt and pepper to taste
Boil water and prepare pasta as directed on the package.
While water is boiling/pasta is cooking, heat a large skillet over medium-high heat. Add pancetta and cook until crispy and fat is rendered, then remove with a slotted spoon and let drain on a paper towel. Reduce heat in the skillet to medium-low and add onions, stirring to coat. Cook for 3-5 minutes, until softened, then add in garlic and spinach, stirring until the spinach wilts. Add in peppers, tomatoes, artichokes and beans, stirring to mix. By this time the pasta should be done, and you can drain it and add it to the skillet with everything else. Reduce heat to low and stir every few minutes while you make the sauce.
Heat a small saucepan over low heat and add butter. Once sizzling, whisk in flour and cook until golden and fragrant. Add in milks, allow the mixture to come to a boil while stirring continuously, then reduce to a simmer and stir for another 5-7 minutes until it thickens a bit. Reduce to low and add parmesan cheese. Taste and season with salt and pepper if desired.
Pour cream sauce into skillet over top of vegetables, pasta and beans, then add in bacon and basil. Stir to mix, then transfer to a large serving dish and eat!
This makes me hungry.

Oh man. That looks good! We love that white bean hummus too. I tried to make it once and totally failed on matching that flavor, but came up with a decent alternative.
I never understand why Meeker doesn’t consider bacon and/or pancetta a meat?! It’s animal flesh for crying out loud.

Not sure if it is new but I got it at their after-Christmas sale and it came in a set of 3! I really like it however it seems to be somewhat fragile… not as sturdy as some of my other bakers.

You are hilarious. I would have been soooo pissed at that delivery guy. I probably would have tried to run after the truck but my lack of exercising probably wouldn’t get me very far. Good thing you had this super tasty pasta to comfort you. I had my triple chocolate doughnuts to comfort me yesterday. Food is the best.

Our husbands sound eerily similar…a meal is simply not a meal if it doesn’t contain MEAT! I too have found myself putting a random chicken breast (boiled & plain & otherwise ICK) in all sorts of things just to make it husband-friendly. It cracks me up/drives me up the freaking wall. This looks delish by the way!

Nate won’t eat anything without meat either… I was just looking at something to make tonight and thought “what kind of meat can I add to this?”. I made quinoa stirfry which has FIVE eggs in it and he loves it except, “you know what would make this even better? Chicken!” ugh. If you ever figure Mr. How Sweet out, let me know.

You guys are LUCKY. My husband doesn’t consider chicken to be meat. He actually asks for a meat dish if we have chicken 2 days in a row. (oy!)

Just made this and wow, it’s incredible! Great recipe! The only thing I would change next time is less spinach and artichokes. I used frozen spinach and baby artichoke hearts so I kinda had to guess as to how much to add, I would use about half. Thank you for another great recipe!
BTW, anyone following weight watchers, this is 11 pts (HA!) which is a bit more than I wanted but still good and I’m sure someone could tone it down to less pts.

HaHa I wish the entire thing was 11 pts, well sort of, it’s very filling. It’s 11 pts per serving, with 4 servings total. I love cream sauce and pasta and any way I can fit it into my diet while still fitting in my pants, I will :)

Do the beans kind of melt into the pasta to make it creamier? Also, what does the evaporated milk tasts like? Is that like sweetened condensed milk? SOMEONEEE help me here :)
Nope, the beans do not melt – perhaps if this was baked and they were at a higher temp they would melt, but as for this they keep their original form. And I’ve never tasted evaporated milk from the can, but it tastes just like milk in dishes. It is not sweetened, so it’s nothing like sweetened condensed!

WOW! I never imagined adding beans to pasta, but now that I see your concoction, I will definitely experiment with it.
My beloved also has some issues with a meal that has no meat in it, and pancetta or bacon won’t count. Slivers of prosciutto either ;-)

I also wanted to add that I love pretty much every recipe you have on here. Either we have the same tastes, or you’re just that good. I love how your food is unique without being too over-the-top (I mean, roasted grapes and sweet potatoes, who thinks of that? yet it’s not crazy, like cauliflower and chocolate…). I am all about finding something new and different to stuff my face with, and I never want to make the same thing twice (okay, well, there are obviously some exceptions…).

My husband always jokes that it’s totally communist not to eat meat, and if he wanted to be deprived of food he’d go live in the Gulag. Whatever! So I tell him go right ahead and make it without meat anyway!
I made this tonight for my book club and it was a big hit! I still feel full and dinner was 5 hours ago! I made it a little bit ahead of time and covered the top with cheese and warmed/baked it in the oven for about 30 min before we ate – turned out great – was still creamy and delicious! I was wondering what kind of pots you use because I burnt the heck out of my favorite ittle oatmeal pot when I was making the sauce! I cant believe the black char on the bottom actually all came off – I mean I BURNT it – but good. Thank you SOS pads! And thank you so much for yet another great recipie!

Made this dish tonight for my family…and it is a definite keeper! Although my youngish minions were enticed at first…they weren’t big on it. (But they have never been thrilled about artichokes, sundried tomatoes or the like — and we are talking a 4, 8 & 10 year old) However, they ate it and by the 10th time I make it, I assure you they will be on board. …And frankly if they aren’t, it’s more for ME!

This was soooo good! Awesome comfort food on a snowy day! Made it last night and I’m thinking of making it again immediately because I want more leftovers! I have a carnivorous husband as well, but I just added lots of bacon (in place of proscuitto) and he was happy! I’m also trying to cram veggies in my face as much as possible lately, so it’s great for me!

I made this last night. Though I like the idea, I thought that it was kind of bland and that there was way too much pasta relative to everything else. If I were going to make it again, I would halve the pasta; halve the sauce; double the spinach, roasted red pepper, sundried tomato, garlic, artichokes, onion, and basil; and add a lot of crushed red pepper.
