Cheese Smothered Stuffed Poblanos.
I want to shout it from the rooftops. I canāt stop eating poblanos!

Today Iām embarrassing myself.
Itās embarrassing how easy these little peppers are. Iām embarrassed to show them to you. Embarrassed to even talk about them because they just⦠seem⦠so⦠simple. And they are.
But some times I find that I gotta share these little simple things that taste so good to me, even if I have the weirdest taste buds ever right now, because things donāt ALways need to be trashed up.
Errr, well, the kinda do. Iād love a world where they do.

Iām not a gigantic fan of traditional stuffed peppers ā probably because of the tomato sauce ā but I make them for Eddie a few times a year and they are totally one of his all-time favorite things. What I can get behind are these poblanos⦠mostly because I go crazy over poblanos and just think they taste BETTER than green bell peppers, but also because I stuffed and then smothered them with cheese. And other delicious things like jasmine rice (ugh so good) and black beans and stuff like that. And they make the most perfect side dish OR dinner OR snack, depending on if youāre into that kinda thing.

So we havenāt really had a crazy heat wave yet. Not one of those omg-itās-so-hot-I-canāt-bear-to-turn-on-the-oven heat wave. Like maybe one or two days at 90 degrees. Which is completely awesome for the people in my life because I have been bratty and complaining. AND it means that I can still turn on the oven and itās really no biggie.
Plus, I had a good four week run of caprese salad every night where I was like oven? Whatās an oven? This was a welcomed change.
Um and can we talk about how Iām going to make these later this week again and grill them? You should probably do that. And letās add grilled corn! Why not?


Cheesy Summer Stuffed Poblanos
Ingredients
- 6 poblano peppers
- 1 tablespoon olive oil
- 1 cup cooked jasmine rice
- 2/3 cup black beans
- 2/3 cup freshly grated monterey jack cheese + extra for topping
- 2/3 cup grape tomatoes, quartered
- 1/3 cup freshly torn cilantro
- 4 green onions, sliced
- 2 garlic cloves, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup sour cream
- salsa for serving
- sliced avocado for serving
InstructionsĀ
- Preheat the oven to 425 degrees F. Slice the tops off of the poblano peppers and remove the inner ribs and seeds. Rub the outsides and insides with olive oil and sprinkle with a pinch of salt and pepper.
- In a bowl, mix together the rice, beans, cheese, tomatoes, cilantro, green onions and garlic. Add in the salt and pepper. While mixing, I sort of mashed everything together with the beans so it stuck. Stir in the sour cream until combined ā helping to hold things together.
- Stuff each pepper with the rice and bean mixture. Place them on a parchment paper covered baking sheet. Bake for 25 minutes, then remove and add a few handfuls of cheese on top of the peppers. Bake for 15 minutes more. Serve immediately with salsa and avocado!

I accidentally on purpose spill extra cheese on the baking pan so I can eat it when itās baked and crunchy. Stuffed poblanos are one of my favorite things to order from our Mexican restaurant. Yum!

personally, I think you should give yourself more credit and not be embarrassed about āeasyā recipes. A lot of people donāt even know where to begin sometimes and the less intimidating recipes are the ones that help them build some courage and try something new :)

Do you eat all the food you make despite hypothyroidism?? I have chronic hypothyroidism and I have such a restrictive diet and its hard to find alternatives that are equally satisfying or at least filling!

This is such perfect timing! My husband planted a ton of poblano peppers in his garden and stuffing them with more than just cheese is a great idea!
I love the way you prepped the poblanos! I just made stuffed poblanos last night and determined to find a better way to stuff them without them ripping to pieces. Itās brilliant to cut off the top and remove the seeds and ribs before roasting them! And you didnāt peel them which is interesting. Must try this technique. Thank you!

Hi, you know my mother in law used to call them āchiles pobresā meaning āchiles for the poorā because the ingredients were cheap and easy to find in your fridge ( most of the Latin moms have any kind of chiles in it) and also because easy to make, just stuffed them with cheese and put it in the oven to melt!

I am in complete agreement with you both on the love of poblanos and not loving traditional stuffed peppers. I usually drizzle them in olive oil, sprinkle with coarse salt, and grill, but this is an actual meal! The black beans and cheese sound like a wonderful combo with the peppers. Love it! OMG, these sound ah.ma.zing. These wouldāve totally been on my menu repertoire while I was preggo b/c I wanted nothing to do with meat *NUTH-ING* Meat was like the grossest thing on the planet to me. I would order veggie subs and eat those all the time. VEGGIE SUBS!!! Who does that?!?
I ate chilis rellenos (made with poblano peppers) almost everyday for lunch while I was pregnant with my second child. Heās 16 and canāt get enough hot and spicy food. I ate Mediterranean food during my pregnancy with my first son. Heās 22 and adores Greek food. Go figure. Good luck with your pregnancy!

I made these last night and they were delicious! All my cheese melted off the peppers and onto the baking sheet though, so I had to try and peel the cheese off the sheet and eat it that way :). I will definitely make these again!
