Oh man! So many great options! I’ll roast a chicken in the crock pot or mix chicken sausage with pasta and whatever veggies I have and whip up a cream sauce! And I always have arborio rice for a quick risotto.
My go-to easy weeknight dinner has got to be stir fry! Whatever random veggies and protein need to be used up, mixed up with some store bought or a quick homemade sauce – too easy over Trader Joe’s frozen rice :) I follow on instagram as well. Thanks for the awesome recipes!!

My favorite is any kind of Mexican skillet with low carb tortillas or butter lettuce wraps.
