Beef stew in the crock pot is always a winner
Whole chicken in the crockpot! Four hours and I have dinner for at least two nights and lunch – I like to make chicken salad one day, tacos another ….
I love soups and stews this time of year. So hearty and easy to make!

It’s everything from chili to stews. Made the hearty chili the other day and I used a vanilla stout! To die for ?
My fave holiday memory is decorating the tree every year while listening and singing along to my favorite record-Mitch Miller’s Christmas album. I still listen to it even now that I don’t live at home!

Store bought spaghetti sauce that I add more garlic and spices too.
I wish I was a person that said something more exciting than a pesto pasta sauce, but what can I say. It’s an easy classic. Pesto, cream, mascarpone or ricotta (whatever is in the fridge), a BOAT load of cracked black pepper and some parmesan. Easy. ??

My favorite easy weeknight dinner is some type of roasted salmon, whatever seasonings I feel like! Plus a nice salad and sautéed vegetables. Roasting salmon is so quick and easy, such minimal clean up!

My favorite easy weeknight dinner: red lentils and chicken curry, coconut milk rice and sautéed fresh spinach! Fresh seasonal fruits such as mangoes, persimmons, pomegranates, oranges for dessert!

My favorite easy weeknight dinner is a vegetable stir-fry, using a medley of frozen veggies (riced cauliflower, broccoli, water chestnuts, red bell peppers) mixed with scrambled eggs. So it’s basically like stir-fried rice, with the riced cauliflower in there.
