We’ve been doing “Salad Mondays” as an easy Monday dinner option–greens from the garden, topped with some kind of meat, misc toppings and dressing! So easy!
Also pre-ordered the book forever ago and am SO STOKED!
Favorite quick dinner: Roasted veg faro salad! Roast veggies/squash lurking in the pantry. While they roast, boil some quick faro, chop apples and lettuce, and shake up a vinaigrette. Mix, top with chopped nuts, and enjoy!
My favorite easy dinner recipe is roasted veg with sausage on top, one pan, so easy to cook and clean! I mix up up the veg depending on the season, but fall is my favorite! Parsnips, sweet potatoes, red onion, garlic, orange bell pepper with chicken apple sausage, yumm!
I love making Chrissy Tieghen’s cauliflower orzo feta spinach salad. The easiest to make and so delicious!

We love breakfast for dinner! Eggs, potatoes, and a veggie (usually spinach, zucchini, or broccoli). Done and done!
Yikes, that’s a tough one… I mostly cook new recipes and have very few that I make over and over! I think I have to say Smitten Kitchen’s ginger fried rice (which is excellent if you haven’t had it). It’s super filling and makes great leftovers too!
Our favorite easy dinner is taco bowls :)
Frozen shrimp, pasta, spinach + load of garlic and olive oil. Quickie Shrimp Scampi!
My favorite easy dinner is leftover rice, fried with soy sauce and sriracha, topped with black beans, kale, eggs, and any other veggies I have hanging out in the fridge. It comes together in about fifteen minutes and I’m happy to eat it every single time!
My favorite easy meal is beef stew in the crock pot! Especially during the winter. Super easy when you’re busy chasing toddlers around 🤣 and I’ve been an Instagram follower for YEARS! Love your stuff ☺️

My favorite easy dinner is buying a pre-made tenderloin from TJs and their garlic spread. Then toast some ciabatta rolls and make a yummy steak sammie with some spinach and a few crumbles of blue cheese with the steak and garlic spread. Its delish!
We are really loving steak fajita so good
My favorite easy dinner recipe is chili. Brown the ground meat then throw it and everything that goes with it in the crock pot and go. Follow you on insta and facebook.
My favorite quick dinner is Tacos! If I’m home on the weekends though, I always have avocado toast with fried eggs and fruit for brunch :) I don’t have an Instagram account but follow you on FB!

Favorite easy dinner? If I’m making dinner, it’s more in-depth than something I can recall off the top of my head. I do thoroughly enjoy the rare nights when I can order us take-out from our local Pizza Ranch. Chicken and pizza for dinner – yum!
Safeway Tuscan Tomato soup and a grilled cheese sandwich – doesn’t get any easier or better!
My favorite easy dinner- tossing some chicken sausages on a sheet pan with some veggies and roasting in the oven. Perfect winter dinner!
My favorite easy dinner is one-pan chicken fajitas. Slice up your peppers & onion and throw them on your sheet pan with chicken breasts. Sprinkle everything with taco seasoning, pour salsa over the chicken, sprinkle with shredded cheese. Put it in a 350 oven for 30 min or so. Easy and so good!
Frittata!
Favorite quick dinner is the old standby of a 3 egg omelette, with any cheese and vegetable remnants I can dig up in the fridge!
I have become obsessed with veggie and rice bowls topped with 2 over easy eggs and sriracha. So easy, filling, and balanced!
Quesadillas are a go-to easy dinner!
The easiest dinner I make at school is definitely macaroni and cheese! I use the boxed Annie’s shells and white cheddar, but then I add hot sauce, mustard, spinach, and broccoli to the sauce before I add the pasta back in, so I can pretend it’s semi-healthy!
My favorite dinner recently is your buffalo chicken caesar salad!!
Oh, this is an easy one….. a recipe of yours with broiled chicken. I have the recipe written on a “post-it note” on the inside of my spice cupboard door. I just wrote the ingredients, not the name of it though….. I make it super quick with a gallon ziplock bag and the dry spices, then apple cider vinegar and honey to brush as it broils. We love it…..and a really good smoky paprika too.
Shrimp scampi is my go to when I don’t have anything else planned. I always have frozen shrimp that I quick thaw and sauté with butter and garlic and pour on top of spaghetti.
My favorite easy dinner recipe is ham and cheese baked in pillsbury crescents. I even use american cheese because I am THAT basic.
Happy Holidays to you and yours!!
