ZUCCHINI NOODLES WITH MINI CHICKEN FETA AND SPINACH MEATBALLS <I make the meatballs ahead of time and pop them in the freezer. Its a perfect quick light dinner after a long day at work!
My favorite easy dinner recipe is sauteed chicken breasts with tomatoes. It is so simple, just saute the chicken breasts in a fry pan and about 3/4 through add chopped tomatoes in the pan. Season with salt and pepper, and serve on top of rice or polenta. Delicious!
Lately we have been loving chicken sausage baked with roasted potatoes and peppers and onions, shop everything then in the oven at 350 for 2 hrs, so easy!
Buffalo Chicken Salad!
Oh we love Ancient Harvest macaroni and cheese, and we throw a bunch of stuff in there. Broccoli, italian sausage, greek yogurt, parmesan, whatever cheese we have on hand or veggies. It’s the best.
Mexican casserole
It’s so easy and healthy to make a quick noodle soup using whatever veggies we have in the refrigerator already.
My easy dinner recipe is chana masala. It’s a quick one pot meal that just needs a few cans of stuff and a few things we always have on hand in the fridge.
I follow you on both Insta and FB! Some of our fave quick weeknight meals – clean out the fridge quesadillas, french bread pizzas (great to use up those little bits of shredded cheese and chopped veggies and cooked meat/sausage), and breakfast for dinner!

Mexican cauliflower rice skillet! Browned ground turkey and pre cut cauli rice with scallions, cilantro, chili seasoning and topped with shredded jack cheese, avocado and chipotle sauce- one pan and so delish!

My favorite easy dinner recipe is a really fast shrimp scampi with angel hair pasta!
My favorite easy dinner recipe is zoodles, marinara and cheese , usually with some ground beef or turkey if we have some !
My favorite fast dinner is crock pot carnitas and you can create your own taco/burrito/bowl with the toppings.
My favorite easy meal is macaroni and tomatoes. Box of macaroni, can of tomatoes, half a stick of butter, plenty of salt and pepper. It’s definitely a poor meal, but damn if it ain’t the most comforting thing sometimes.
My favorite easy one is to pan sear some cherry tomatoes until they burst mixed with (thyme, chopped shallot, olive oil and garlic. Then I smother some pasta or toast with pre-made pesto and add the tomato mixture. Garnish with breadcrumbs and burrata. Just takes a few minutes.
Sweet potato pancakes! I have two little, so breakfast for dinner is always exciting for them!!
Mine is a creation I made while studying abroad in Italy (this was 9 years ago so bear with me). I used frozen, grilled eggplant and chopped it up. Sauteed then added marinara sauce and then let it simmer for a couple of minutes. Serve over pasta. I also make it more “from scratch” by chopping up raw eggplant and either sauteeing or roasting and then dumping into marinara sauce.

My favorite easy dinner is breakfast for dinner. I love to create an omelet with hash browns and bacon. It’s delicious!
My favorite easy dinner is crockpot chicken tacos, throw chicken breasts and a can of salsa in the crockpot then shred when it’s done cooking!
My favorite easy dinner meal is pulling naan bread from the freezer, topping it with red sauce, cheese and whatever I have in the fridge that sounds good (leftover chicken? olives? ham? anything!), and then throwing it in the oven for 10 minutes. Easy!
Grilled peanut butter and honey sandwiches with super crusty sourdough bread then dipped in jelly! it’s seriously the best and sorrrrta a grown up version of pb&j lol

I love making your springtime skillet lasagna recipe. Its so easy and it’s always a hit!
If I have nothing in the fridge and no time, I always go for breakfast burritos. They never disappoint!
My favorite easy dinner is “clean out the fridge” pizza. Usually, Friday or Saturday night I take pizza dough and use whatever I have leftover in the fridge to top it. We rarely have the same pizza twice in this house and hardly any flops!! Makes for some interesting toppings!! :)
We LOVE chicken parm!! Every one of my boys (ages 5-10) will eat it and fight over the leftovers!
A pan fried piece of fish with several different kinds of in season veggies.
Spaghetti with oil & garlic topped with a fried egg and parmesan. So comforting! I follow you on both social media sites :)
slow cooker sweet potatoes & black beans! just put 2 medium sweet potatoes, 2 cans of black beans, 1 jar of salsa and chili powder in the slow cooker – 6 hours later you have a super comforting dinner.
I like making tacos or burgers for a quick dinner! When I make tacos my kids sometimes end up just eating cheese for dinner then… 🤷🏻♀️

Scrambled eggs! Honestly, I never get tired of scrambled eggs, especially when I’m starving and tired and want dinner in 5 minutes or less :)
Oh man, your chicken feta meatballs with zoodles is definitely our go to. It’s so easy to make a double batch ahead of time and freeze for easy weeknight dinners. I’ve rubbed off on multiple friends who now do the same :)
