These sloppy joe sliders are the best weekend dish! Toasty buns, melty provolone cheese, sloppy joes and pickles, baked until warm and cheesy and delicious.

Sloppy joes are kind of famous in our house.

I started making them over a decade ago and they are easily one of our favorite meals. Everyone adores them. 

Emilia calls them the “little brown sandwiches.”

We also eat them in a variety of ways! Sure, we have them as sandwiches. But Eddie will eat them over sweet potatoes. I’ve also made totchos or even stuffed them inside grilled zucchini boats. And stuffed peppers!

Basically, you cannot go wrong with sloppy joes. Trust me.

I feel like I can say this because we didn’t eat sloppy joes when I was a kid. My mom didn’t make them. And the whole idea of them sounded very… unappealing. 

But then! I started making them from scratch and our world changed. They are a delicious, satisfying recipe that can easily be made ahead of time. They reheat perfectly and leftovers are wonderful. 

Seriously, the best ever.

So it should come as no shock that I wanted to make them in slider form, just like our favorite cheeseburgers

The sliders are IDEAL for game day or a party, or even if you’re having a bunch of kids over to hang out. It’s a super easy idea to serve with chips or carrot sticks. And they also taste phenomenal.

It goes like this:

Slice a slab of dinner roll sliders in half. 

Layer on some provolone cheese. Key!

Pile on the sloppy joe mixture. 

Add some pickles, if you’re a pickle freak like me. 

Add the top half of the slab buns.

Bake until all warm an melty and cheesy. 

A dream meal.

Of course, you can leave the pickles off, change the cheese up, etc. Make it your own! 

They are a crowd pleaser no matter what.

Ingredients

Instructions 

  • As a note: this sloppy joe mixture will make more than enough for one set of slab sliders (and probably even a second set). I take the leftover meat and use it for leftovers during the week or even stick it in the freezer for another meal!
  • Preheat the oven to 350 degrees F.
  • Heat a large pot over medium-low heat and add 1 tablespoon of olive oil. Stir in the onion, peppers and garlic with a big pinch of salt and pepper. Cook until the onions soften, about 5 to 6 minutes.
  • Increase the heat to medium and add in the turkey and beef with another pinch of salt and pepper, using a wooden spoon to break it apart and combine it. Cook until browned.
  • Stir in the tomato paste, paprika and brown sugar. Stir in the worcestershire and apple cider vinegar. Stir in the tomato sauce. Cover and cook for 15 to 20 minutes, stirring often. Taste and adjust to your preferences – more salt or pepper, more sugar if it’s too tangy, more vinegar if it’s too sweet.
  • Slice the slab of slider rolls in half horizontally, keeping them attached as much as you can. Place the bottom of the rolls on a baking sheet.
  • Layer the provolone cheese on top of the bread. Top with the sloppy joe mixture. Not all of it, but a good layer of it. If desired, top with pickles.
  • Add the top layer of the buns. If desired, brush the top of the buns with melted butter and a sprinkle of sesame seeds. This is totally optional!
  • Place the pan in the oven and bake for 10 to 12 minutes, or until the cheese is melty and the sandwiches golden. Remove and serve!
