Loaded Grilled Potatoes with Guacamole.
These loaded grilled potatoes are the best summer indulgence! Crispy bacon, spicy fresh jalapeno, melty cheddar and scallions are served on crunchy hot potatoes with a side of guac. Dreamy side dish!

These loaded grilled potatoes are crispy and crunchy, topped with savory bacon, melty cheddar cheese, sliced green onions and fresh jalapeno peppers. The potatoes are buttery and cloud-like inside while the outsides are super crisp with the best texture.
We adore any version of grilled potatoes and the best party? You can add alllll the toppings.
This is the side dish of the summer! If you love to use the grill like I do, your family will go wild over these. They are almost like loaded fries or nachos and they are fantastic.
Remember my grilled gorgonzola potatoes? The ones I make constantly in the summer?
Well.
The kids aren’t thrilled about the gorgonzola and never have been. So ever since I’ve been making the gorgonzola version, I’ve also been making these. Truly loaded potatoes, right on the grill!
Sharp cheddar, crispy bacon, diced jalapeno peppers, sliced scallions and lots of guac for dipping.
Dream side dish! Or snack. Or happy hour treat. Even poolside lunch!
Lots of different options and I am into it. Of course, leave off the jalapenos if the kids aren’t into that. And if you don’t have fresh ones, you can dice up some pickled jalapeños too!
Now while I love to make these grilled potatoes, they do take a bit of time. Not a TON of time, but if I’m making these to go with a meal, then I really like to start with these on the grill so they can finish around the same time as meat or burgers or whatever else it is that we are grilling. In order to get them soft and tender, you will need to have them on the grill for 20 minutes or so.

Another option is to par-boil them before grilling. I’ve done that before, but it’s not necessary at all! I actually just prefer to turn on the grill outside, slice the potatoes and get things going. This is usually the first step I do when I’m serving this with a meal.
It’s so easy! While the potatoes are on the grill, you can make a salad, make the guacamole to go with these, get the rest of your meal ready or more. It’s super simple because they don’t need constant babysitting.
Anyway, back to how incredible these are. If you’re a nacho or loaded fry lover, then you will love these. My kids LOVE them. They are such a fun treat to make on a weekend, for a movie night or even as a burger side dish instead of fries.
Simple, easy, nothing fancy but SO delish.
Loaded Grilled Potatoes

Loaded Grilled Potatoes
Ingredients
- 6 slices bacon, diced
- 2 pounds baby Yukon gold potatoes, halved
- 1 to 2 tablespoons olive oil
- kosher salt and pepper
- 1 teaspoon garlic powder
- 1 cup shredded sharp cheddar cheese
- 1 jalapeno pepper, seeded and diced
- 4 green onions, thinly sliced

- 2 avocados
- 1 to 2 limes, juiced
- 2 tablespoons diced onion
- ¼ cup chopped cilantro
- salt and pepper
Instructions
- Heat the bacon in a skillet over medium heat. Cook until crispy and the fat is rendered, then remove with a slotted spoon and place on a paper towel to drain the excess grease.
- Preheat your grill to the highest heat. Let it heat for at least 15 minutes – it should read over 500 degrees F.
- While the grill is heating, layer two sheets of foil. Fold up the edges (you can see this is in my photos above!) to create a barrier of sorts. Place the potatoes in the foil pack and drizzle on the olive oil. Sprinkle on a big pinch of salt, pepper and the garlic powder. Toss well, coating every potato. I place the foil pack on a baking sheet so it’s easy to transport out to the grill.
- Place the foil pack on the grill (do not cover the top with foil) and close the grill. As a personal preference, I like most of the potatoes to start cut-side down so they get crisp on that flat edge. Grill for 15 to 20 minutes, tossing every five minutes or so, until the potatoes are fork tender and getting a bit crisp.
- Once the potatoes are tender, sprinkle on the cheddar and cover the grill for 1 to 2 minutes. Transfer the foil pack back to the baking sheet.
- Top with the crispy bacon, jalapenos and green onions. Serve immediately with the guacamole!
