I am a firm believer in apple cider over pumpkin this time of year. I live for apple cider everything! The flavor and even the scent are so much more nostalgic for me than pumpkin is.
Plus, I just like apple cider better. It’s less spiced. It’s more appley.
Wow. I know – great descriptions.
But I think it’s because apple cider is so FRESH and tart. It’s a bit refreshing and thirst-quenching, whereas pumpkin is just so warm and cozy. I like apple bits a whole lot more.
Then, we have the whole idea of coffee cake.
Cake for BREAKFAST?
Why yes, of course. That’s the best idea ever.
We all know that coffee cake is just a perfect excuse to eat cake for breakfast.
Here’s how I make it!
The base of this cake has grated apple in it and a touch of apple cider. It’s so delicious and moist! This cake base is from my blueberry peach coffee cake and everyone loves that so much. So I kept the fruit in it and it’s delish.
Next, the crumble. It’s a perfectly crunchy streusel with cinnamon and nutmeg and it’s lovely. The thickness of the streusel is what sells me, because I love a thick crumb. Half the time I only want to eat the crumb part of coffee cake!
And finally, the glaze. An apple cider glaze takes this over the top and gives it the best fall flavor ever. It’s really where the apple cider shines and has the perfect amount of sweetness.
It’s a great cake to share with others. Fantastic on a weekend morning and every better on a holiday! Tastes like a warm apple-y hug.

Apple Cider Coffee Cake
Ingredients
- 2 cups all purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon apple pie spice
- ½ cup unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- ⅓ cup whole milk
- ¼ cup apple cider
- 2 cups grated apple
crumb topping
- 3 tablespoons brown sugar
- 3 tablespoons sugar
- ½ teaspoon cinnamon
- pinch salt
- ¼ cup unsalted butter, melted
- ¾ cup all-purpose flour
apple cider glaze
- 1 heaping cup of powdered sugar
- 1 ½ teaspoons vanilla extract
- ¼ cup apple cider
Instructions
- Preheat the oven to 350 degrees F. Spray a 9-inch springform pan with nonstick baking spray (the kind that has flour in it). Place the pan on a baking sheet.
- In a small bowl, whisk together the flour, baking powder, salt and apple pie spice.
- In the bowl of your electric mixer, beat the butter and sugar together until fluffy and combined, about 5 minutes. Beat in each egg 1 at a time. Beat in the vanilla extract.
- Beat in half of the dry ingredients, then beat in the milk and apple cider. Beat in the remaining dry ingredients, scraping the sides and bottom of the bowl as needed, until just combined. Use a spatula to stir in the grated apple.
- Pour the batter into the spring form pan. Make the streusel mixture and sprinkle it all over the top of the batter.
- Bake the cake for 45 to 50 minutes, or until a tester inserted into the center comes out clean. Let the cake cool for 15 to 20 minutes, then remove the sides of the springform pan. Drizzle on the apple glaze. Let it cool completely before serving.

- To make the crumb topping, whisk together the sugar, cinnamon, salt and melted butter until combined. Whisk for a good minute or two until the sugar begins to dissolve, then use a wooden spoon to stir in the flour. The mixture will be crumb-like and dry. Almost like sludge or sand. This is what you want! Sprinkle the crumb on top of the cake before baking.

- Whisk together the ingredients until smooth and combined. If the mixture is too thick, whisk in more apple cider 1 teaspoon at a time. If it’s too thin, add more powdered sugar a few tablespoons at a time.

Is the tablespoon of vanilla correct? I don’t know that I have ever seen that much vanilla in a cake.
I looooooooove the peach version of this cake & have made it many, many times! Don’t know why it never occurred to me to make it with apples but I will definitely be trying that soon! Love the idea of grating the apple instead of dicing it — sometimes I find the chunks of apples in cake to be a little off-putting so this seems like the perfect way to add flavor & keep the cake nice & moist without affecting the texture too much

I made this apple cider cake and the taste is delicious and that streusel… oh my, heaven!! My cake did deflate and condense a bit after cooling, I am thinking that the honeycrisp apple was maybe a bit too juicy or that i should use less apple … any thoughts? Will definitely be making again maybe with a little tweaking!!

Knew I had to make this since your apple cider donut cake is our favorite. This didn’t disappoint. Easy to assemble, apple flavor is robust, cake is tender and crumb topping is amazing. Will definitely make again.
