What must I say about these fluffy rolls?!

The brioche skillet buns are so soft and pull-apart tender, making them perfect for your holiday table. They are an ideal side for your turkey and gravy (hello, dipping!) and even work to make a fabulous sandwich the next day with leftovers.

Plus, they are cute and fluffy and buttery on top and just make me happy by existing. By looking at them! 

Rolls are one thing that I will often buy on Thanksgiving if I can find GOOD ones – or if we have a local bakery that makes great ones for the holiday. It’s also a dish that I often delegate to someone else.

Of course, I have a few favorites: slab biscuits, parker house rolls, sourdough rolls, cloverleaf rolls and the like. My grandma used to find the best, butteriest cloverleaf rolls that were amazing. When I was a kid I would dip them in mashed potatoes!

When I have a recipe like this, I can’t resist making it for Thanksgiving. I want everyone else to experience it, especially mixed on their plate with all the other goodness. 

And these are SO easy to make.

They start with a warm milk and yeast mixture. I like to use honey or maple syrup to help the yeast along. Then that gets mixed with flour, eggs and butter. 

The dough will rise and become SO pillowy. It’s crazy! And fabulous. I love a brioche dough because it’s incredibly soft and fluffy.

The first rise is done in a bowl, then you form the dough into rolls and place them in the skillet. This is where you do the second rise and they are ready to go!

Bake them and your house will smell like heaven.

P.S. good news: because they are so hearty and fluffy, these work if you make them the night before too! Just have them fully cooled and then seal in a container or bag. 

And we can’t forget about… the butter!

This salted maple butter is so incredibly delicious, part of me wants to eat it right off the spoon. Spread it on all the things – rolls, pancakes, toast, everything.

It’s sweet and salty and slathered on a hot brioche bun? Oh my goodness, I can’t even take it.

I have never been a huge bread person and this recipe is something I wouldn’t have tried when I was a kid. Bread and butter? I wasn’t into it. But now, I am so glad I know the magic of brioche.

Ingredients

Instructions 

  • Make sure the milk is warm, but not hot. You want it to be 100 degrees F.
  • Mix the warm milk, honey and yeast together in a measuring cup or bowl. Let it sit until foamy, about 10 to 15 minutes.
  • Use your electric mixer with a dough hook. Add the flour, sugar, salt and yeast mixture to the bowl. Add in the eggs. Mix until combined. Continue to mix and knead the dough with the dough hook until it becomes soft and sticky, about 5 minutes.
  • After 5 minutes, add the butter pieces. Continue to mix and knead for another 5 to 10 minutes, until the butter is incorporated and the dough is soft.
  • Transfer the dough to a greased bowl and cover it. Let it rise for 1 hour, or until it’s doubled in size.
  • After it’s risen, punch the dough down. Divide the dough into 16 separate pieces. Form the pieces into rolls, pinching the bottom so they stay together.
  • Rub butter all over two oven-safe skillets or one 9x13 inch dish. Place the dough pieces in the skillets (dividing them evenly) or in the baking dish. Cover and let rise for another hour.
  • Preheat the oven to 350 degrees F. Brush the tops of the rolls with the egg wash. Bake for 20 to 25 minutes, until they are soft and fluffy. Rub the tops with butter and sprinkle with flaky salt.
  • Serve with the maple butter!
