Blackberry Chip Overnight Oats

We love these blackberry chip overnight oats! Easy to make ahead for breakfast, chewy, satisfying overnight oats and made with a quick blackberry sauce and chocolate chips. So good!

Ingredients

overnight oats

  • 1 cup old-fashioned rolled oats
  • 1 cup milk, (cow, almond, coconut, etc), plus more for drizzling
  • 1 tablespoon chia seeds
  • 1 tablespoon hemp hearts
  • 2 teaspoons honey or maple syrup
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ cup mini chocolate chips, plus more for topping

Instructions 

  • In a bowl, stir together the oats, milk, chia seeds, hemp hearts, maple syrup, vanilla extract, salt and chocolate chips. Cover and refrigerate for at least 4 hours, or overnight.
  • To make the blackberry sauce, combine the berries, honey and lemon juice in a saucepan over medium-low heat. Cook, stirring occasionally, until the berries begin to break down and get saucy, about 10 minutes. Remove from the heat and let cool completely. This stays great in the fridge for a few days.
  • When ready to serve, add a few spoonfuls of the blackberry sauce in the bottom of a bowl. Top with half of the overnight oat mixture. Add a bit more blackberry sauce on top and sprinkle on some more chocolate chips if desired. Stir and enjoy!
