This easy cheddar scallion beer bread is a great recipe to make for soups, salads or as a side dish for a cozy dinner. It’s super easy to make and tastes amazing – everyone always loves it!

This cheddar scallion beer bread is perfect to make on a fall afternoon, lovely for soup dipping or just great to serve with any kind of cozy meal. It can replace cornbread with your chili or even croutons in your salad.

Beer bread is so nostalgic for me. It feels very 90s. I remember my mom making it from some sort of boxed mix she got at a party… maybe like a pampered chef party?? Anyway, it was SO good! There was always something delicious about it. Like it was very biscuit-like and perfect for dipping.
Does anyone else remember this? It was definitely a 90s or early 2000s thing and was a recipe we’d make in the fall. As soon as it got cold, beer bread sounded great.
So eventually, I started making my own. This asiago beer bread is a hugely popular recipe here on the blog – it’s divine with soup and so easy to make.
Beer bread uses an entire bottle of beer. And no, it doesn’t taste like beer, but it uses it for leavening the bread. And it has the most buttery, crisp exterior.
Plus, then we add in cheddar… the cheese makes it.
Also, it’s super buttery because you pour an entire melted stick of butter OVER the beer bread dough. Yes. Don’t get it twisted – this is a step you absolutely do not want to skip. OR skimp. Don’t use less butter. The butter is what gives you the excellent crust. Not to mention, it makes it taste so incredibly amazing.
Let me tell you how simple this is!
It’s a bit of flour, baking soda and salt. A touch of sugar!
Then we have the grated cheddar. Make sure to grate it fresh. Also, a ton of sliced green onions.
Next, a whole bottle of beer to bring it together. 12 ounces!
And finally, a stick of butter, melted and poured over top of the batter.

I’m pretty sure it’s divine intervention that I’m giving you this recipe right before Halloween. It would be a great pre-trick or treating side dish.
The inside is so flakey and tender. The outside is so crisp and buttery!
The cheddar swirled throughout the bread gives it even more flavor and is everything you want it to be.
Serve it with soup or just as a snack!

Cheddar Scallion Beer Bread
Ingredients
- 3 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon kosher salt
- 1 tablespoon sugar
- 6 ounces freshly grated sharp cheddar cheese
- 6 green onions, thinly sliced
- 12 ounces your favorite beer
- ½ cup butter melted
Instructions
- Preheat the oven to 375 degrees F. Spray a 9x5 loaf pan with nonstick spray.
- In a large bowl, whisk together the flour, baking powder, salt and sugar. Stir in the cheddar cheese and green onions. Add in the beer and stir until combined.
- Scoop the batter into the 9x5 pan. Pour the melted butter directly on top of the bread batter.
- Bake for 55 to 60 minutes, or until golden on top and set in the center. Let cool fully before slicing and serving! This also freezes very well.

Yes! I grew up Mormon, so beer was a huge no no at our house, But when I got up into my 20’s and moved out, I took matters into my own tentacles and made a loaf at my apartment. It was SO GOOD. This looks so good.
