Chickpea Crunch Salad with Peanut Dressing

This chickpea crunch salad is super satisfying and a texture lovers' dream. Cabbage, red peppers, carrots, green onions, chickpeas and cilantro are tossed in a peanut lime dressing. It's delicious and so crunchy!

Ingredients

  • 1 small head of cabbage, shredded
  • 1 cup grated carrots
  • 1 red pepper, thinly sliced
  • 6 green onions, thinly sliced
  • cup chopped cilantro
  • kosher salt and pepper
  • cup chopped peanuts
  • 1 to 2 cans chickpeas, drained and rinsed

Instructions 

  • In a large bowl, combine the cabbage, carrots, red peppers, green onions, cilantro, chickpeas and peanuts. Add a big pinch of salt and pepper and toss well. This is where your flavor is going to come from for these veggies!
  • Drizzle a few tablespoons of dressing on and toss. Add more dressing as desired - as much as you want for the salad.
  • Serve and enjoy!

  • Combine all ingredients in a blender with a big pinch of salt and pepper and blend until smooth. If the mixture is still too thick, add a bit more hot water until desired consistency is reached. Store leftovers in the fridge.
