Pumpkin Bread with Chai Streusel

Our favorite pumpkin bread! It's tender and perfect with a crunchy chai spiced streusel on top. A cross between quick bread and cake, it's the best treat for fall. Have it for breakfast or dessert!

Instructions

  • Whisk all the spices together until combined. Store in a sealed container for 3 to 6 months.

  • Preheat the oven to 350 degrees F. Spray a 8x4 inch loaf pan with nonstick baking spray.
  • In a small bowl, whisk together the flour, chai spice, baking powder, soda and salt.
  • In a large bowl, whisk together the eggs and sugar. Whisk in the pumpkin and yogurt. Whisk in the oil and vanilla extract.
  • Stir in the dry ingredients until just combined and smooth. Pour the mixture into the prepared loaf pan.
  • To make the streusel, stir together the sugar, flour and chai spice. Add the butter and mix with a fork, eventually mixing with your hands so the butter is fully incorporated and the mixture is moistened. Evenly sprinkle it over the pumpkin bread.
  • Bake the bread for 50 to 55 minutes, or until a tester inserted into the center comes out clean.
  • Remove and let cool completely before slicing. Enjoy!
