These chili stuffed peppers are a fun twist on serving a classic bowl of chili! Roasted peppers are stuffed with smoky chili, melty cheese and all the toppings to bring you a delicious, satisfying and cozy meal.
Preheat the oven to 425 degrees F. Slice the peppers in half lengthwise and place them on a baking sheet. Spray with olive oil spray and sprinkle all over with salt and pepper.
Roast the peppers for 10 to 15 minutes.
Remove the sheet and stuff each pepper with about ⅓ cup chili. This will obviously depend on the size of your peppers! Try to get peppers that are uniform in size. FIll each pepper up to the top.
Top each with a sprinkling of cheddar. Return the pan to the oven and bake for 8 to 10 minutes, or until the cheese is melty and bubbly.
Serve immediately with sour green, green onions, tortilla chips and cilantro.
