We adore these strawberry oatmeal cups! Hearty, satisfying oatmeal bites filled with fresh strawberries and served with cream or yogurt. The perfect breakfast or snack that you can make ahead of time!
Preheat the oven to 350 degrees F. Spray a muffin tin with nonstick baking spray.
In a small bowl, whisk together the oats, baking powder, cinnamon and salt.
In a large bowl, whisk together the eggs, milk, cream, applesauce and honey. Whisk in the vanilla extract.
Stir the dry ingredients into the wet ingredients until just combined. Stir in the diced strawberries. Divide the mixture evenly between the 12 muffin tins.
Bake for 25 minutes, or until set and golden. Remove and serve with a drizzle of cream, nuts (like almonds or pecans) or more honey if desired. You can also serve with yogurt, served hot or cold or even spread with nut butter.
