This summer marinated cheese is the perfect snack! Great for happy hour, a BBQ at home or even a pool party, it's spreadable on crackers and crostini and tastes amazing. Fresh and light and so delicious!
Slice the goat cheese and place it in a single layer on a pie plate, baking dish or any dish with a lip. Sprinkle the corn and scallions over the cheese. Season all over with a pinch of salt and pepper.
Whisk together the olive oil, vinegar, chives, dill and crushed red pepper. Pour it over the cheese in the dish. You can add the chive blossoms or extra herbs at this point.
Stick in the fridge for up to 2 hours, covered. Or serve it right away! I like to serve it with crackers, crostini, chips or even veggie sticks.
