This watermelon greek salad is refreshing, crisp and cooling. It's filled with cucumbers, kalamata olives, red onion and fresh herbs, then drizzled with a honey lemon dressing. It's delicious!
In a large bowl of plate, combine the watermelon, cucumber, olives, onion and feta. Top with the fresh mint, parsley and dill. Sprinkle everything with salt and pepper.
Drizzle the dressing on top and serve!
honey lemon vinaigrette
Whisk together the vinegar, lemon juice, honey, garlic, dill and a big pinch of salt and pepper. Whisk in the olive oil until emulsified.
